Indonesian Pork Satay Recipe

Charcoal-grilled satay is better than any other satay. I had never done it, so I had difficulty in finding the right way to fan the charcoal. You don’t want the charcoal to be burning red, but just the right heat for the satays to cook evenly.

Pork satay is made using leaner part of the pork, cut into long thin pieces. The marinades can be anything between two to six hours or even longer. This recipe is very easy to make, and easier if I can grill them on electric grill. The marinade has to be finely ground. I find that galangal provides the excellent texture to the spice. Even without garlic and shallots, two of the must haves in satay making, they turned out to be just as delicious!

Not a pork fan? Substitute it with beef or chicken. The satay is tasty enough without any sauce, but if you want to fancy it up, serve with sweet soy sauce dip with shallots or peanut sauce.

Ingredients

* 2 cloves garlic
* 1/2 cup chopped green onions
* 1 tablespoon chopped fresh ginger root
* 1 cup roasted, salted Spanish peanuts
* 2 tablespoons lemon juice
* 2 tablespoons honey
* 1/2 cup soy sauce
* 2 teaspoons crushed coriander seed
* 1 teaspoon red pepper flakes
* 1/2 cup chicken broth
* 1/2 cup melted butter
* 1 1/2 pounds pork tenderloin, cut into 1 inch cubes
* skewers

Directions

1. In a food processor, process garlic, green onions, ginger, peanuts, lemon juice, honey, soy sauce, coriander, and red pepper flakes. Puree until almost smooth. Pour in broth and butter, and mix again.

2. Place pork cubes in a large resealable plastic bag, and pour mixture over meat. Marinate in the refrigerator for 6 hours, or overnight.

3. Preheat grill for medium heat. Remove pork cubes from bag, and thread onto skewers. In a small saucepan, boil the marinade for 5 minutes. Reserve a small amount of the marinade for basting, and set the remainder aside to serve as a dipping sauce.

4. Lightly oil preheated grill. Grill for 10 to 15 minutes, or until well browned, turning and brushing frequently with cooked marinade. Serve with dipping sauce.

Indonesian Fried Noodles (Mie Goreng) Recipe

This tasty noodle dish is the same one my mom used to make for me when I was growing up. It's definitely comfort food. You can alter it with adding your favorite meats and veggies.

Indonesian Fried Noodles (Mie Goreng) Recipe

Ingredients
  • 3 (3 ounce) packages ramen noodles (without flavor packets)
  • 1 tablespoon vegetable oil
  • 1 pound skinless, boneless chicken breast halves, cut into strips
  • 1 teaspoon olive oil
  • 1 teaspoon garlic salt
  • 1 pinch ground black pepper, or to taste
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped shallots
  • 5 cloves garlic, chopped
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup broccoli florets
  • 1 cup sliced fresh mushrooms
  • 1/4 cup soy sauce
  • 1/4 cup sweet soy sauce (Indonesian kecap manis)
  • 1/4 cup oyster sauce
  • salt and pepper to taste
Directions

1) Bring a pan of water to a boil, and cook the ramen until tender, about 3 minutes. Plunge the noodles into cold water to stop the cooking, drain in a colander set in the sink, and drizzle the noodles with 1 tablespoon of vegetable oil. Set aside.

2) Place the chicken strips in a bowl, and toss with olive oil, garlic salt, and black pepper. Heat 1 tablespoon of oil in a wok over high heat, and cook and stir the chicken until it is no longer pink, about 5 minutes. Stir in the shallots and garlic, and cook and stir until they start to turn brown. Add the cabbage, carrots, broccoli, and mushrooms, and cook and stir until the vegetables are tender, about 5 minutes.

3) Stir in the ramen noodles, soy sauce, sweet soy sauce, and oyster sauce, mixing the noodles and sauces into the vegetables and chicken. Bring the mixture to a simmer, sprinkle with salt and pepper, and serve hot.

Pisang Goreng (Indonesian Banana Fritters) Recipe

The most popular Indonesian snacks in my version. Serve it hot and make extra. With this recipe, you always want more!

Pisang Goreng (Indonesian Banana Fritters) Recipe

Served for  : 4 people

Ingredients

* 1 1/4 cups all-purpose flour
* 2 tablespoons granulated sugar
* 1/4 tablespoon vanilla powder
* 1/2 cup milk
* 1 egg
* 2 tablespoons butter, melted
* 1 teaspoon rum flavoring
* 4 ripe bananas, sliced
* 2 cups oil for frying

Directions

1. In a large bowl, combine flour, sugar and vanilla powder. Make a well in the center, and pour in milk, egg, melted butter and rum flavoring. Mix until smooth. Fold in banana slices until evenly coated.

2. Heat oil in a wok or deep-fryer to 375 degrees F (190 degrees C).

3. Drop banana mixture by tablespoon into hot oil. Fry until golden brown and crispy, 10 to 15 minutes. Remove bananas from oil, and drain on paper towels. Serve hot.

Indonesian Satay Recipe

Indonesian Satay Recipe
This is an original Indonesian satay. I send it from a long way.

Cook Time: 20 Min
Ready In: 1 Hr
Served for: 6 people

Ingredients

* 3 tablespoons soy sauce
* 3 tablespoons tomato sauce
* 1 tablespoon peanut oil
* 2 cloves garlic, peeled and minced
* 1 pinch ground black pepper
* 1 pinch ground cumin
* 6 skinless, boneless chicken breast halves - cubed
* 1 tablespoon vegetable oil
* 1/4 cup minced onion
* 1 clove garlic, peeled and minced
* 1 cup water
* 1/2 cup chunky peanut butter
* 2 tablespoons soy sauce
* 2 tablespoons white sugar
* 1 tablespoon lemon juice
* skewers

Directions

1. In a bowl, mix soy sauce, tomato sauce, peanut oil, garlic, black pepper, and cumin. Place chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator for at least 15 minutes, but not overnight. This will make the meat too dark.

2. Preheat the grill for high heat.

3. Heat vegetable oil in a saucepan over medium heat, and saute onion and garlic until lightly browned. Mix in water, peanut butter, soy sauce, and sugar. Cook and stir until well blended. Remove from heat, mix in lemon juice, and set aside.

4. Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill skewers about I5 minutes per side, until chicken juices run clear. Serve with the peanut sauce.

Indonesian Fried Rice (Nasi Goreng) Recipe

Indonesian Fried Rice (Nasi Goreng) Recipe

"Nasi Goreng, Indonesian fried rice. This dish can be enjoyed by itself or as the basis of a larger meal, for example with a rijsttafel. It is very easy to make and won't take more than 20 minutes to prepare."

Original Recipe Yield 4 servings

Ingredients
  • 1 cup uncooked white rice
  • 2 cups water
cooking spray
  • 3 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 leek, chopped
  • 1 clove garlic, minced
  • 2 green chile peppers, chopped
  • 1/2 pound skinless, boneless chicken breasts, cut into thin strips
  • 1/2 pound peeled and deveined prawns
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 3 tablespoons sweet soy sauce
Directions
  1. Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Spread onto a baking sheet, and refrigerate 2 hours until cold.
  2. Heat a large nonstick skillet over medium heat. Spray with nonstick cooking spray. Pour eggs into hot skillet. Cook until the eggs begin to set, lifting up the edges of the set eggs to allow the uncooked egg to contact the hot pan, about 1 minute. Flip omelet in one piece and cook until fully set, about 30 seconds. Slice omelet into 1/2 inch strips.
  3. Heat the vegetable oil in a wok or large frying pan over high heat. Stir in the onion, leek, garlic, and chile peppers. Cook, stirring, until onion is soft, 3 to 5 minutes. Stir in the chicken, prawns, coriander, and cumin, mixing well. Cook and stir for approximately 5 minutes.
  4. Mix in the cold rice, sweet soy sauce, and omelet strips; cook until shrimp are bright pink and chicken is no longer pink in the center, 3 to 5 minutes.
